Pineapple and Strawberry Fruit Kebabs
Fresh pineapple and strawberries are available at Christmas. I think this can be prepared Christmas Eve and grilled just before lunch starts Christmas Day. I love this because it is a really light starter.
Ingredients:
1 fresh pineapple, peeled and cut into chunks
1 punnet of strawberries, trimmed and halved
1 tablespoon chopped mint
¼ pint orange juice
6 passion fruit cut in half, seeds removed
Bamboo sticks
Method:

Place one chunk of pineapple followed by a half of a strawberry on a bamboo stick and repeat this process four times. Place onto a tray pour over the orange juice and add passion fruit and mint. Cover and place in fridge until Christmas Day.

Heat a frying pan. Pour on some of the orange and passion fruit juice. Cook and reduce for 5 minutes. Next place the kebabs in the juice. Add remaining juice. Cook for a further 5 minutes. Remove a kebab. Carefully arrange on plate. Spoon some of the warm juice over. Serve warm. I would recommend these to be served with some raspberry or mango sorbet.
