Cod Fillet with Smoked Salmon & Garlic Butter

Cod is a wonderful fish with great texture.
The smoked salmon butter is so simple and tasty. Make
sure to serve crusty bread to mop up all those juices.
Ingredients - Serves 4
- 4 x 200g/7oz thick cod fillets
- 100g or 4oz plain flour
- 2 tbsp vegetable oil
Vegetables
- 1 carrot peeled
- 1 croquette
Parsley Butter
- 150g/5oz butter
- 50g/2oz smoked salmon cubes
- 3 cloves garlic (crushed)
- 1 tbsp chopped parsley
- Juice of 1 lemon
METHOD :
Parsley Butter
- Melt butter in a saucepan with smoked
salmon and crushed garlic.
- Cooked gently for about 10 mins leave
to infuse (allow flavours to mingle) for 20 mins.
- Add chopped parsley, lemon juice and
seasoning.
Cod Fillets
- Season and dredge the fillets in flour.
Shake off excess.
- Heat the oil in a large pan.
- Add a knob of butter and cook the cod
fillets over a medium heat for about 4 mins on each
side.
To serve :
- Place the vegetables on the centre of
the plate.
- Place cod on top of the vegetables.
- Spoon over the butter.
- Serve fresh herbs.
- Serve with crusty farmhouse bread.
